This is a deceivingly simple meal to make for a very lazy Sunday. It’s perfect with some crusty bread for dippin’ and forget the cutlery to enjoy it 10 times more.
Ingredients (serves 4):
Cumin 2 tsp
Mild chilli powder 1 tsp
Saffron powder 1/2 tsp
Coriander powder 1 tsp
Salt 1 tsp
Black pepper 1 tsp
1 small white onion
Diced lamb 200g
Broad beans 100g
Method:
- Dice an onion and add to a deep cooking pot. Add the cumin, chilli powder, coriander powder and saffron powder.
- Generously drizzle extra virgin olive oil into the pot and put on a medium heat. Stir until the spices have mixed completely and the onions are sweating.
- Add the diced lamb, increase the heat to high and sear the lamb.
- Add one large cup of water then add the broad beans.
- Cover with a lid and simmer on a low heat until the spices and broad beans have cooked through and meat is tender.
- leave on the lowest heat until you’re ready to serve.
- Dish up, sprinkle some freshly chopped coriander on top and serve with bread.
