Fancy a light meal bursting with flavour? Then you’ve got to try this dish. A personal favourite of mine, that i enjoy eating as a side, main, snack and everything in between.

Ingredients (serves 5): 

2 large tomatoes
1 green pepper
2 medium Aubergine
3 garlic cloves
Fresh coriander (large bunch)
Chilli powder 1/4 tsp
Paprika 2 tsp
Cumin 1 tsp
Salt 1/2 tsp
Olive oil 3 tbsp

Method: 

  1. Find a big large, deep sauce pan and add the oil, crushed garlic and spices.
  2. Dice all the veg into chunks and add to the pan
  3. Chop the coriander (leaving the stems) and add to the rest of the ingredients. You’re sauce pan should be looking full to the brim – don’t worry, this will reduce as the vegetables cook.
  4. Turn on the cooker to a medium heat and listen as the garlic begins to fry in the oil. Slowly start adding water and stir the ingredients. Once the spices are completely mixed, turn the heat down and place a lid on top.
  5. Regularly check the dish and stir to avoid burning the base. Using your cooking spoon, crush the larger pieces.
  6. Serve with bread, once all ingredients are cooked through and soft. poach an egg with the sauce if you want something a little more filling.
